Easy Feijoada (Brazilian Black Bean Stew)

1. 1Step 1: Soak the beans for 12 hours. Drain the water, wash the beans, and drain again.
2. 2Step 2: Cut corned beef into cubes, and ribs between bones (or into cubes if boneless). Cut bacon into pieces and sausage into slices. Chop onion and garlic.
3. 3Step 3: In a large pan, sauté corned beef and ribs in olive oil in batches. When seared, transfer to a pressure cooker and add drained beans, 10 cups of fresh water, and smoked meat.
4. 4Step 4: Cook on High pressure for 30 minutes after it gets pressure. When done, let pressure release naturally for 30 minutes.
5. 5Step 5: While beans cook, place bacon in the same pan used for searing and fry in its released fat. Once crisp, add onion and garlic and sauté until onion is translucent. Add sausage and cook for a minute. Turn off heat and wait for beans and meats to finish.
6. 6Step 6: After meats and beans are ready and pressure released for 30 minutes, transfer everything to the big pan with sausage, bacon, onion, and garlic. Add bay leaves and adjust salt if necessary. Cook over medium heat for 30-40 minutes, until liquid thickens to your liking.
7. 7Step 7: Serve on a bed of white rice, with vinaigrette, farofa, and orange slices.
