Greek Tsoureki (Sweet Easter Bread)

1. 1Step 1: In a large mixing bowl, add the warm milk, 1 tbsp sugar, and yeast. Let sit 5–10 minutes until foamy.
2. 2Step 2: In a separate bowl, whisk the sugar, eggs, butter, orange zest, vanilla, salt, mahlepi, and mastiha until smooth and combined.
3. 3Step 3: Add it into the yeast mixture and lightly whisk until combined.
4. 4Step 4: Lastly, with the dough hook attachment, slowly add the flour to the mixing bowl and mix for 6-7 minutes until smooth and elastic. Dough should be slightly sticky but workable. If the dough is still sticky after you add 4 cups, add a little more about 1/3 cup at a time. The dough should not be sticking to the side, but not too hard.
5. 5Step 5: Place dough in a greased bowl, cover, and let rise in a warm place for 1½–2 hours until doubled in size.
6. 6Step 6: Divide into 3 strands and braid them together, tucking the ends underneath. Place on parchment-lined baking sheet.
7. 7Step 7: Cover and let the loaf rise again in a warm spot in your kitchen for 30–45 minutes.
8. 8Step 8: Brush with egg wash and sprinkle toppings on if using.
9. 9Step 9: Bake at the bread 350°F for 25–30 minutes, until golden brown.
