1. 1Step 1: Rinse the rice thoroughly to wash all the starch away.
2. 2Step 2: Cook the rice with onions, bay leaves, and salt in a bit of oil until lightly toasted, to develop the aroma of the rice.
3. 3Step 3: Add water and let the grains absorb all of the liquid, leaving bubbling holes on the surface as a sign that the grain absorbed all the moisture.
4. 4Step 4: Spread dried beans on a flat tray, discarding any pebbles or debris.
5. 5Step 5: Rinse the beans (not soak) then transfer to a pressure cooker.
6. 6Step 6: Cook the beans in the pressure cooker for 45 to 60 minutes.
