Use only ¼ cup of this powder; you can substitute with besan.2Step 2: In a large mixing bowl, combine rice flour, besan, fried gram powder, salt, sesame seeds, ajwain, hing, and chilli powder. Mix well.3Step 3: Heat 1 tablespoon of butter or oil until very hot (but not smoking). Pour it quickly over the flour mixture and mix with a spoon first, then use your fingers to incorporate the oil evenly. This makes the chakli crunchy.4Step 4: Add water little by little, starting with 3 tablespoons and adding 1 teaspoon at a time, until a dough forms. Do not knead; just mix to get a non-sticky dough and shape it into a log.5Step 5: Grease the chakli maker and fill it with a portion of the dough.6Step 6: Shape the dough on a moist cloth, dry cloth, or parchment paper. Slowly press the chakli maker to release the dough and form spirals. Use your finger to end the spiral and join the end to the spiral.7Step 7: Heat oil on a medium-high flame. Continue making the rest of the chakli while the oil heats up.8Step 8: Test the oil by dropping a small piece of dough; it should sizzle and rise to the surface without turning brown. If it sinks, the oil is not hot enough.9Step 9: Carefully slide the chakli into the hot oil. Fry about 3 to 4 at a time, depending on the size of your pan.10Step 10: Do not disturb them for 1 to 2 minutes, until they become firm. Then turn them to the other side. Fry on a medium flame on both sides until crunchy and golden.11Step 11: Remove the chakli to a steel colander or cooling rack and cool completely. Transfer to an airtight steel or glass jar.getsaucepan.com/r/eac5f7ba-d83f-4b32-9dc2-cabbb73cf94e · Original: https://www.indianhealthyrecipes.com/chakli-recipe-chakralu-recipe/
