Claudia Roden's Almond Orange Cake

1. 1Step 1: Wash the oranges and boil them whole for 1 1/2 hours or until they are very soft.
2. 2Step 2: Oil a 9-inch round cake pan, preferably springform, and dust with matzah meal or additional ground almonds.
3. 3Step 3: Preheat oven to 375°F.
4. 4Step 4: Beat the eggs with the sugar. Add the orange-blossom water (if using), baking powder, and almonds, and mix well.
5. 5Step 5: Cut the oranges open and remove the seeds, then puree in a food processor.
6. 6Step 6: Add the orange puree to the egg-and-almond mixture. Pour into pan.
7. 7Step 7: Bake for an hour, and let cool before removing from pan.
