Caldo Verde (Portuguese Potato, Greens and Sausage Soup)

1. 1Step 1: Heat 2 tbsp olive oil in a large pot. Cook onion until soft, then add garlic and cook briefly.
2. 2Step 2: Add chopped potatoes and enough water (8-10 cups). Simmer until potatoes are very tender (about 20 minutes).
3. 3Step 3: Use an immersion blender (or carefully transfer to a blender) to create a smooth, creamy soup base. It's okay if there are some potato bites remaining but most should be turned into broth.
4. 4Step 4: Heat another 2 tbsp olive oil in a skillet. Add smoked sausage rounds and cook on both sides until crispy (about 3 minutes each side).
5. 5Step 5: Thinly slice the collard greens. Add thinly sliced collard greens to the soup and cook until tender (about 15 minutes).
6. 6Step 6: Drizzle remaining olive oil before serving for authentic flavor. Top with fried sausage rounds and serve.
