Jamaican Curry Goat

1. 1Step 1: Wash the goat meat with water and the juice of a lime or lemon, drain, and get ready to season.
2. 2Step 2: In a large bowl, combine the washed goat meat with salt, onion, scotch bonnet, and curry powder. Stir well, optionally adding a bit of olive oil to the marinade, and refrigerate overnight or at least 2 hours.
3. 3Step 3: Heat the oil in a wide, heavy pan with a lid over medium heat. Add the marinated goat pieces and stir well, searing the pieces without covering the pot. After about 5 minutes, add all other ingredients except the water and mix well.
4. 4Step 4: Add the water to the bowl used for marinating, swirl to pick up any remaining marinade, then pour into the pot. Raise the heat to high, bring to a boil, then reduce to a gentle simmer and cover. Cook slowly for 1 1/2 hours until tender.
5. 5Step 5: If the liquid runs low, add a cup or two of hot water. Add the quartered potatoes, tucking them under the liquid, and cook for another 30 minutes or so until fully cooked.
6. 6Step 6: Taste for salt and adjust. If you want a thicker gravy, crush a couple of potato pieces with the back of a spoon. Optionally top with chopped parsley or cilantro before serving.
