1 Step 1: Preheat the oven to 350°F (180°C). Grease 12 ramekins or a muffin tin.2 Step 2: Finely chop the dates, place them in a bowl, and cover with the boiling water and baking soda. Let sit undisturbed for 20 minutes, then mash or purée until smooth, including the liquid.3 Step 3: Beat the butter, brown sugar and molasses until creamy. Beat in the eggs one at a time, then the vanilla.4 Step 4: Whisk the flour, baking powder and salt together, then beat into the butter mixture until just combined. Beat in the date purée.5 Step 5: Divide the batter among the prepared ramekins and smooth the tops. Bake for 20 to 25 minutes, until a toothpick inserted in the centre comes out clean. Do not overbake.6 Step 6: Cool the cakes on a wire rack for about 5 minutes while you make the sauce.7 Step 7: Melt the butter in a medium saucepan. Add the cream, brown sugar, molasses and salt, and simmer for 2 to 3 minutes, stirring, until slightly thickened. Whisk in the vanilla off the heat and let cool slightly.8 Step 8: While the cakes are still warm, run a knife around each one and unmold onto a tray. Level the tops with a serrated knife if you like, then brush all sides with about half the toffee sauce so it soaks in.9 Step 9: Serve warm with the remaining toffee sauce and a spoonful of cream, whipped cream or vanilla ice cream.getsaucepan.com/r/0acfa8be-2af9-56fa-9854-e35fadc813ff
