1 Step 1: Combine the ground pork, fish sauce, oyster sauce, brown sugar, rice powder, pepper, lemongrass, garlic and shallot in a large bowl and mix until evenly combined.2 Step 2: Oil your hands, then shape the mixture into about 32 small patties, roughly 2 inches across and a half inch thick. Chill for 15 minutes so they firm up.3 Step 3: Toss the sliced papaya with the salt and let it sit for 30 minutes. Rinse well, squeeze dry, then mix with the sugar and vinegar. Let it sit at least 1 hour for best flavor.4 Step 4: Stir the sugar into the hot water until fully dissolved. Add the fish sauce, lime juice, garlic and chilies, then taste and adjust.5 Step 5: Cook the rice vermicelli according to the package directions, then drain, rinse under cold water and set aside.6 Step 6: Preheat a charcoal grill, or a griddle pan over medium-high heat, and oil the grates. Grill the patties about 8 minutes per side until lightly charred and cooked through, with no pink in the center. Alternatively, pan-fry over high heat about 5 minutes per side.7 Step 7: Divide the noodles, lettuce, cucumber, herbs and pickled papaya among four bowls. Add the grilled patties and spoon the dipping broth over the top, or serve it on the side.getsaucepan.com/r/0c522229-5de7-5a53-a08e-9da58aa2ef4b
