1 Step 1: Mix the flour and salt in a large bowl. Rub in the ghee or oil with your fingertips until the mixture looks like coarse crumbs.2 Step 2: Pour in the warm milk or water in small splashes, working it in as you go, until the mixture comes together as a very stiff, tight dough. Knead it until it feels noticeably denser and harder than the dough you'd use for roti.3 Step 3: Cover the dough with a damp cloth and rest for 30 minutes.4 Step 4: Divide the dough into 6 equal balls. Roll each ball into a circle about 5 inches across and about 1/2 inch thick, using dry flour only if needed. Small cracks at the edges are normal.5 Step 5: Heat a tawa, skillet or flat griddle over medium heat.6 Step 6: Place a bhakri on the hot tawa and cook for 2 to 3 minutes, until light golden spots appear on the underside.7 Step 7: Flip the bhakri. Press the edges and surface firmly with a folded cloth, a flat spatula or a bhakri press so the centre cooks through.8 Step 8: Keep flipping every 30 seconds to 1 minute, pressing as you go. Lower the heat if the bhakri browns too fast, and cook until both sides are golden and crisp, about 6 to 8 minutes in total.9 Step 9: Optionally roast the bhakri briefly over an open flame to finish, turning it until it is evenly crisp.10 Step 10: Brush or smear the hot bhakri with ghee and serve immediately.getsaucepan.com/r/1fd7443d-4806-57a9-bffc-b6f98ac36031
