1 Step 1: Pound the kroeung by hand in a mortar and pestle until smooth; a blender tears the herbs and dulls the flavor.2 Step 2: Stir the prahok into about 50 ml (1/4 cup) of water and mash until nearly dissolved; discard any bones or stringy bits.3 Step 3: Dry-roast the rice in a wok over medium heat until golden and fragrant, then grind coarsely.4 Step 4: Stir-fry the pea eggplants in 1 tablespoon oil over medium-high heat until soft, browned and lightly charred; set aside.5 Step 5: Chop the pumpkin, long eggplant, carrot, beans, papaya, jackfruit and banana into bite-size pieces.6 Step 6: Heat the remaining oil in a large pot over medium heat, fry 2 tablespoons of the kroeung for about 1 minute until fragrant, then add the pork or chicken, the prahok liquid or fish sauce, salt and sugar. Fry until the meat is nearly cooked.7 Step 7: Add 2 cups of water or stock, the firmest vegetables and fruit, and half the roasted rice. Bring to a boil, then reduce to a gentle simmer.8 Step 8: Add another 2 cups of water, the catfish if using, the quicker-cooking vegetables, the stir-fried pea eggplants and the remaining kroeung. Stir well and simmer gently for about 10 minutes.9 Step 9: Stir in the rest of the ground rice and enough water to keep the pot loose, then simmer, stirring often so the rice does not scorch on the bottom, until the soup is thick, stew-like and the vegetables are tender.10 Step 10: Cook the pork until no pink remains and its juices run clear, reaching an internal temperature of 145°F (63°C). For chicken, cook until the internal temperature reaches 165°F (74°C) and the juices run clear.11 Step 11: Stir in the leafy greens for the last few minutes so they wilt but stay bright, then turn off the heat.12 Step 12: Taste and adjust with fish sauce, salt and palm sugar, adding water if the soup is too thick, then ladle into bowls and serve hot with steamed jasmine rice and any garnishes.getsaucepan.com/r/2050021c-c30d-56f8-8157-a20a942276b7
