1 Step 1: Stir together the soy sauce, wine, sugar, garlic, five-spice, white pepper and sesame oil in a large bowl. Set aside.2 Step 2: Pound each pork chop between plastic wrap to about 1/4 inch thick. Pound gently and do not make them too thin, or they will dry out. Cut a few shallow slits around the edges so they do not curl when frying.3 Step 3: Add the pork and the beaten egg to the marinade, toss to coat, cover and refrigerate at least 2 hours, up to overnight.4 Step 4: Shake off excess marinade, then dredge each chop in sweet potato starch on both sides, pressing to adhere. Rest on a plate for 10 minutes so the coating sets.5 Step 5: Heat about 1 inch of oil in a wide skillet or wok over medium-high heat to 350°F (175°C).6 Step 6: Fry the chops two at a time for 1 to 2 minutes per side until light golden brown, lowering the heat to medium if they darken too fast. Keep the oil near 350°F (175°C).7 Step 7: Drain the chops on a wire rack set over a rimmed baking sheet or on paper towels. For extra crunch, return them to 375°F (190°C) oil for about 30 seconds to 1 minute per side until deep golden brown, then drain again.8 Step 8: Cook until the pork reaches 145°F (63°C) inside, with the center just barely opaque and juices running clear. Rest 3 minutes, then slice or serve whole over rice with your chosen sides.getsaucepan.com/r/246968a9-5b05-52e4-bb62-555db2c4200a
