1 Step 1: Pressure cook the soaked, drained chickpeas with 5 cups of water, 1 teaspoon salt, 2 bay leaves and 2 tea bags (optional, for color): bring to high pressure, cook 1 to 2 whistles, then medium for about 10 minutes, and let the pressure release naturally. Alternatively, simmer in a covered pot for about 1 hour until very soft. Drain, reserving the cooking liquid, discard the bay leaves and tea bags, and set the chickpeas aside.2 Step 2: Heat the oil in a large heavy pot over medium heat. Add the cumin seeds, cloves and cardamom and let them sizzle for about 30 seconds.3 Step 3: Add the chopped onion and 1/4 teaspoon salt and cook, stirring, for 7 to 8 minutes until light golden brown, adding a tablespoon of water if the pot looks dry.4 Step 4: Stir in the ginger garlic paste and green chili and cook about 2 minutes until the raw smell is gone.5 Step 5: Add the ground coriander, cumin, chili powder, turmeric and chole masala and stir for about 1 minute, adding a splash of water if they stick.6 Step 6: Pour in the tomato puree and cook on medium, stirring every few minutes, for about 15 minutes until thick and the oil begins to separate from the masala.7 Step 7: Add the cooked chickpeas with 2.5 cups of water (or some of the reserved cooking liquid) and the crushed kasuri methi. Bring to a rolling boil, then reduce to medium-low, cover and simmer for 20 to 30 minutes, mashing a few chickpeas against the side of the pot, until the gravy is thick and clings to the chickpeas.8 Step 8: Taste and adjust salt. Stir in the garam masala and lemon juice off the heat. Let rest at least 10 minutes, then garnish with cilantro and julienned ginger and serve hot with basmati rice, naan, poori or bhatura.getsaucepan.com/r/306a5b1e-2952-54b1-a2a8-9860096dd841
