1 Step 1: Make the slaw: toss the carrot, cabbage and sliced onion with the vinegar, salt and sugar in a bowl, then rest at least 10 minutes so the flavors meld.2 Step 2: Blend the cilantro, mint, green chili, ginger, garlic, lemon juice, water and salt into a smooth green chutney. Set aside.3 Step 3: Whisk the eggs with the milk, salt, chili powder and black pepper. Stir in the chopped onion, tomato, cilantro and green chili.4 Step 4: Warm a pan or tawa over medium heat and lightly grease it. Cook each paratha on both sides until light golden and crisp at the edges, then set aside.5 Step 5: Heat the butter in a skillet over medium heat. Pour in about half the egg mixture and spread it into a thin round the size of the paratha. Cook about 1 to 2 minutes until the base is set and the top is nearly set.6 Step 6: Lay a cooked paratha on top of the omelette and press gently so they stick. Flip the whole thing carefully and cook another 1 minute until the egg is fully set and the paratha is golden. Repeat with the remaining egg and paratha.7 Step 7: To assemble, place the egg paratha on a board, spoon the slaw down the center, drizzle with green chutney, then roll up tightly and serve right away.getsaucepan.com/r/6385259e-2950-523b-8323-b38b5ab5b265
