1 Step 1: Grate the onion, squeeze out the juice and keep it. Mix the ground meat with the onion juice, yogurt, salt, paprika and pepper, knead for 8 to 10 minutes until firm and sticky, then cover and refrigerate for at least 2 hours, ideally overnight.2 Step 2: Lay the sliced tenderloin or sirloin over plastic wrap, layer the seasoned ground meat on top, and roll into a tight log about 2 to 3 inches across. Wrap tightly in foil and freeze for 1 to 2 hours until firm but not fully hard.3 Step 3: Slice the frozen log into very thin strips with a sharp knife, working one piece at a time.4 Step 4: Heat the olive oil in a large skillet over medium-high heat. Fry the meat slices in a single layer in batches, about 2 to 3 minutes per side, until browned and crisp at the edges, and keep each batch warm.5 Step 5: Melt the butter in a saucepan over medium heat, stir in the tomato paste and cook for 1 minute, then add the grated tomatoes, salt, paprika and water. Simmer for 10 to 15 minutes until thickened, adding a splash of water if it gets too thick.6 Step 6: Toast the bread pieces in a skillet with a little butter until crisp and golden.7 Step 7: Arrange the toasted bread on a plate, spoon over the warm tomato sauce, layer the seared meat on top, and spoon yogurt around the edges.8 Step 8: Just before serving, heat the rest of the butter in a small pan until it sizzles, then drizzle it over the meat. Finish the plate with grilled green peppers and tomato wedges.getsaucepan.com/r/7638ed66-b8c1-5b4b-a379-eeb26a22cc8c
