1 Step 1: Whisk the eggs, sugar, honey and a pinch of salt together until combined and slightly paler, not foamy.2 Step 2: Sift in the flour and baking soda and whisk until mostly smooth; a few small lumps are fine.3 Step 3: Drizzle in the oil and fold 5 to 10 times, then whisk in the water until the batter is pourable.4 Step 4: Transfer the batter to a jug or squeeze bottle and refrigerate for 15 minutes so the flour hydrates and the pancakes cook flat.5 Step 5: Heat a nonstick or well-seasoned skillet over low to medium-low heat, targeting about 338 to 356°F (170 to 180°C). Rub a small amount of oil over the surface, then wipe off the excess with a paper towel so only a thin film remains.6 Step 6: Pour about 22 to 25 g of batter per pancake into rounds about 8 cm (3 in) across, leaving space between them, 2 to 3 at a time.7 Step 7: Cook until the edges look dry and two or three bubbles have burst, leaving small craters, about 60 to 120 seconds.8 Step 8: Flip and cook the second side 40 to 60 seconds until set and lightly golden. Re-oil and wipe the pan before each batch, and lower the heat if browning is too fast.9 Step 9: Spread about 2 tbsp red bean paste on one pancake, thicker in the center with a 5 mm border, and top with another pancake, pressing gently to seal.10 Step 10: Trim any escaped filling, cool briefly on a rack, and rest 10 to 15 minutes before eating so the moisture settles into the pancakes.getsaucepan.com/r/78c700c5-033e-5324-85c1-695c3a0833ed
