1 Step 1: Whisk the eggs, broth, salt and fish sauce (if using) until yolks and whites are fully combined. Strain through a sieve for a finer texture if you have time.2 Step 2: Brush a small heavy-bottomed pot or earthenware pot (ttukbaegi) with a little sesame oil. Pour in the egg mixture, filling no more than about two-thirds full.3 Step 3: Set over medium heat and stir gently with a spoon, scraping the bottom and sides, for 3 to 4 minutes until large, soft curds form and the eggs are about 75 percent set.4 Step 4: Level the surface and scatter over half the green onion. Lower the heat to low, then cover with a domed lid or heatproof bowl with room to expand. Steam for 2 to 3 minutes, checking once; add 1 minute at a time if the center still looks liquid.5 Step 5: Cook until the eggs are softly set and puffed, with steam escaping from under the cover and no runny raw egg. The center should reach 160°F (71°C) on a food thermometer. A slight wobble is fine.6 Step 6: Turn off the heat. Uncover, drizzle with the remaining sesame oil, and top with the remaining green onion, sesame seeds and a pinch of black pepper. Serve immediately while still puffed.getsaucepan.com/r/7d68c9da-2abe-5129-afed-f9487b7753ee
