1 Step 1: Mix the flour and salt, rub in the oil or ghee, then add water gradually and knead into a soft, smooth dough, about 8 to 10 minutes.2 Step 2: Cover the dough and rest it for 30 minutes while you make the filling.3 Step 3: Boil the potatoes in salted water until fork tender but not falling apart, about 20 minutes. Drain, cool, peel and mash until completely smooth with no lumps.4 Step 4: Mix the mashed potato with the green chili, ginger, cilantro, cumin, coriander, chili powder, garam masala, chaat masala and salt. Taste and adjust the seasoning, keeping the filling dry.5 Step 5: Divide the dough and the filling into 8 equal portions each. Flatten a dough ball into a disc, place a portion of filling in the center, and gather the edges to seal.6 Step 6: Dust the stuffed ball with flour and roll gently into a round about 7 to 8 inches across, keeping the thickness even and the edges not too thick. Do not press so hard that the filling leaks.7 Step 7: Heat a tawa or skillet over medium-high heat. Cook the paratha about 30 seconds, then flip. Spread 1/2 teaspoon ghee or oil over the top, flip again and spread more on the other side.8 Step 8: Press the edges gently and keep flipping until both sides are golden brown with crisp spots and the paratha puffs up, about 2 to 3 minutes total. Reduce the heat if they brown too fast.9 Step 9: Keep the cooked parathas wrapped in a towel to stay soft, then serve hot with butter, yogurt or pickle.getsaucepan.com/r/7f766643-79c5-5af7-b233-ff6c5d2dc99e
