1 Step 1: Mix the flour, half the salt and the sugar. Rub in the oil or ghee until the mixture looks like breadcrumbs.2 Step 2: Add the warm water a little at a time and knead 5 to 8 minutes into a soft, smooth dough. Brush with oil, cover and rest for 30 minutes.3 Step 3: Toss the sliced onion with the lime juice and a pinch of salt, and set aside to soften. Mix the chopped green chilies and cilantro with the cucumber, and keep chilled.4 Step 4: Divide the dough into 4 balls. Roll each into a thin circle about 8 inches (20 cm) across, brush with oil and dust with flour. Cut a line from the edge to the center, roll it into a cone, flatten it into a disc, and rest for 5 minutes.5 Step 5: Roll each disc into a thin round about 9 inches (22 cm) across.6 Step 6: Heat a flat skillet or tawa over medium heat with a little oil. Cook each paratha, flipping, until golden and flaky with light brown spots on both sides. Set aside.7 Step 7: Lower the heat slightly, grease the pan with a few drops of oil, and pour in a quarter of the beaten egg. Spread it into a thin round, slightly larger than the paratha.8 Step 8: When the edges of the egg start to set, lay a cooked paratha on top and press gently so it adheres. Cook 1 to 2 minutes, until the egg is set and the edges brown, then flip paratha and egg together for a few seconds.9 Step 9: Transfer to a board egg side up. Sprinkle with chaat masala and rock salt, and spread a line of the pickled onion down the center. Add the cucumber and cilantro mixture, squeeze on a little lime, then drizzle with ketchup along the center, leaving the edges clear.10 Step 10: Fold the bottom edge up over the filling, roll tightly, and wrap the lower half in paper or foil to hold it. Serve at once while the paratha is warm.11 Step 11: Repeat with the remaining dough, egg and filling.getsaucepan.com/r/9c835c2e-783e-59b6-bbb9-d027b6df430e
