1 Step 1: Soak 8 wooden skewers in water for 20 minutes. Make the yogurt sauce by stirring together the yogurt, crushed garlic, cumin, lemon juice, olive oil, salt and pepper. Chill it for at least 20 minutes, or overnight if you have time.2 Step 2: Squeeze the grated onion in a towel or sieve to remove excess liquid, then add it to a large bowl with the lamb, cilantro, parsley, garlic, panko, spices and salt. Mix by hand with damp fingers until just combined; do not overwork the meat.3 Step 3: Divide the mixture into 8 portions and, with damp hands, press each around a skewer into a log about 1 inch thick and 4 inches long. Chill for 15 to 30 minutes so they firm up.4 Step 4: Heat a grill or large skillet over medium-high heat and lightly oil the surface. Cook the koftas, turning every 2 to 3 minutes, until browned on all sides and cooked through, about 10 to 12 minutes total.5 Step 5: Check that the koftas reach 160°F (71°C) in the center with a thermometer; the meat should be no longer pink inside and the juices should run clear.6 Step 6: Rest the koftas for 2 to 3 minutes. Spread warm flatbread with yogurt sauce, add salad and a kofta, then drizzle with more sauce and a squeeze of lime.getsaucepan.com/r/aac43f4d-21f1-5acb-8330-19bab8002a7f
