1 Step 1: Put the pork belly slices in a pot with the onion, garlic, bay leaves, peppercorns and just enough water to cover. Simmer over medium-low heat for 45 to 60 minutes, until the pork is tender.2 Step 2: Drain the pork and chill it uncovered in the refrigerator for at least 1 hour, or overnight, so the skin dries out.3 Step 3: Preheat the air fryer to 350°F (175°C). Crisp the pork for 30 to 45 minutes, flipping now and then and working in batches so it does not steam. Chop the crisp pork into small, bite-sized pieces.4 Step 4: Melt the butter in a skillet over medium heat. Soften the minced red onion for about 5 minutes, then add the garlic and chili and cook about 2 minutes until golden and fragrant.5 Step 5: Add the chopped chicken liver and cook 5 to 7 minutes, until fully cooked through with no pink inside.6 Step 6: Add the crispy pork, calamansi juice, soy sauce, oyster sauce, salt and pepper. Stir-fry 3 to 5 minutes, until the pork is coated and the sauce has reduced slightly.7 Step 7: Grease a sizzling plate with 2 tablespoons of butter and heat it until hot. Spread the sisig on the plate, top with a cracked egg if using, then sprinkle with green onions and chilies. Serve right away, still sizzling, with calamansi wedges.getsaucepan.com/r/c9acf499-7ebe-5ad1-bbc7-2d2fed7586ac
