1 Step 1: Whisk the glutinous rice flour, sugar and milk in a large microwave-safe bowl until smooth and free of lumps.2 Step 2: Cover loosely with cling wrap, vented. Microwave on high for 1 minute, stir well, then microwave in 1-minute rounds, stirring between, for about 3 minutes total, until the dough is thick, translucent and firm and bouncy, with no visible liquid.3 Step 3: Alternatively, steam the batter over high heat for about 20 minutes until cooked through.4 Step 4: While the dough is still warm, beat in the butter until fully absorbed.5 Step 5: Once cool enough to handle but not cold, knead into a smooth, stretchy dough, ideally wearing food-safe gloves or with oiled hands.6 Step 6: Dust a surface and your hands with cornstarch or potato starch. Divide the dough into 8 to 10 pieces and shape by hand, or flatten each piece into a 4-inch circle for filling.7 Step 7: For daifuku, place 1 teaspoon of red bean paste or jam in the centre of each circle, gather the edges and pinch closed, then shape into a ball.8 Step 8: For coated mochi, mix the kinako, or the ground sesame or peanut with the sugar and salt. Toss the shaped pieces in the mixture until coated.9 Step 9: Serve at once, or refrigerate or freeze for later. Let frozen mochi thaw slightly before eating.getsaucepan.com/r/0e2ed0e6-b7ec-550e-8add-332880aef0ce
