1 Step 1: Sauté the minced onion in the oil over medium heat for 5 to 7 minutes until tender and nearly translucent. Mix with a spatula, then knead by hand until sticky and pale.3 Step 3: Divide into four portions. Toss each between your hands about five times to release air, then shape into ovals.4 Step 4: Press a dent into the center of each patty. Refrigerate, covered, for at least 30 minutes so they hold together.5 Step 5: Heat the oil in a large frying pan over medium heat. Sear the patties about 3 minutes per side until browned.6 Step 6: Add 3 tablespoons red wine to the pan, reduce the heat to low, cover and cook 5 to 7 minutes until cooked through. Check that the centers are no longer pink and clear juice runs when pressed; the internal temperature should reach 160°F (71°C) for ground meat.7 Step 7: Uncover, raise the heat briefly to evaporate the alcohol, then move the patties to plates without washing the pan.8 Step 8: In the same pan over medium heat, add the butter, ketchup, tonkatsu sauce, red wine and water. Simmer until the sauce thickens enough to hold a line when a spatula is dragged through it.9 Step 9: Spoon the sauce over the patties and serve the rest on the side with steamed rice and a vegetable or salad.getsaucepan.com/r/ea9e1b83-2e4e-5e54-9646-e126eb0020cb
