1 Step 1: Dry roast the besan for the kadhi in a large pot over medium heat until fragrant and just toasted, not browned, then set aside.2 Step 2: Whisk the room-temperature yogurt and besan until smooth, then whisk in the turmeric, red chili, coriander powder and water, breaking up all lumps.3 Step 3: Heat the oil in a deep pot over medium-high until properly hot, then fry the fenugreek and cumin seeds until they splutter and add the asafoetida.4 Step 4: Cook the sliced onion and green chili for about 2 minutes, then add the ginger and garlic and cook about 1 minute until they change color.5 Step 5: Pour in the besan-yogurt mixture and stir constantly over medium-high heat until it comes to a boil, to help prevent splitting.6 Step 6: Lower the heat to low-medium and simmer for about 30 minutes, stirring now and then and scraping the bottom; add the salt after about 15 minutes. Thin with hot water if it thickens too much.7 Step 7: Make the pakora batter: combine the besan, onion, green chili, cilantro, turmeric, red chili powder, crushed coriander seeds, ajwain, salt and yogurt. Add the water gradually to a thick, pourable batter, then stir in the baking soda and mix by hand for about a minute.8 Step 8: Heat about 2 cups of oil in a kadai over medium heat, then drop in spoonfuls of batter and fry on medium-low, turning once, until golden on both sides. Work in batches without crowding and drain on paper towels.9 Step 9: Near the end of the simmer, stir in the cilantro and adjust the consistency with a little water if needed. Add the pakoras to the kadhi, bring back to a gentle boil, then turn off the heat and let them sit in the residual heat for a few minutes.10 Step 10: Heat the ghee in a small pan over medium, fry the cumin seeds, ajwain and broken dried chilies until the seeds crackle, then stir in the Kashmiri chili powder and remove from the heat immediately.11 Step 11: Pour the hot tadka over the kadhi, garnish with cilantro and serve with rice or roti.getsaucepan.com/r/1012f263-f41b-5a23-9d32-2fa40d4da401
