1 Step 1: Dissolve the sugar and yeast in the lukewarm milk and water and let it foam for about 5 minutes.2 Step 2: Combine the flour and salt in a large bowl, add the yeast liquid, and stir until roughly combined.3 Step 3: Knead by hand for a few minutes until smooth. The dough will be sticky at first, so resist adding extra flour.4 Step 4: Rest the dough in a lightly oiled, covered bowl for 15 minutes.5 Step 5: Do a set of four stretch-and-folds, rotating the bowl a quarter turn each time. Rest 15 minutes, then repeat the stretch-and-fold two more times with 15-minute rests between, then rest 15 minutes more.6 Step 6: Gently punch the dough down and divide it into five equal pieces.7 Step 7: Shape plain pieces into smooth balls or flattened rounds. For filled pişi, flatten a piece, add a couple of spoonfuls of the feta and herb mix, and pinch the edges closed tightly so no cheese leaks out.8 Step 8: Cover the pieces and let them prove for 20 to 30 minutes until puffed. Optionally press a finger gently into the centre of each.9 Step 9: Heat the oil to 350 to 365°F (175 to 185°C) in a deep pan or fryer.10 Step 10: Fry a few pieces at a time, turning once, until golden on both sides, about 2 to 4 minutes total. Keep the oil at temperature between batches.11 Step 11: Drain on paper towels and serve warm.getsaucepan.com/r/2ba74bb3-0cc6-548e-89d5-ff099058ab71
