1 Step 1: Wash and dry the eggplants, trim the stems and slice lengthwise. In a saucepan, bring 1 cup vinegar, 1 cup water and 1 teaspoon salt to a boil over medium heat.2 Step 2: Add the eggplant and turmeric, reduce the heat to low and simmer for 10 to 15 minutes until the eggplant is very soft and holds its shape when pressed.3 Step 3: Drain the eggplant in a colander, let it cool completely, then mash it or pulse briefly in a food processor so it stays chunky, not puréed.4 Step 4: Make sure the carrots, cauliflower, bell pepper, cucumbers, celery, garlic and chili are finely chopped or grated, then spread the vegetables and herbs on a clean towel to dry for an hour or two.5 Step 5: In a large bowl, combine the mashed eggplant, dried vegetables, herbs, golpar, nigella, coriander seeds, salt and turmeric, and mix well.6 Step 6: Pack the mixture firmly into clean, dry jars, leaving about 1 inch of headspace. Pour in enough vinegar to cover the vegetables completely, pressing out air bubbles.7 Step 7: Seal the jars tightly and keep them at cool room temperature in a dark place for 7 to 10 days, then refrigerate. Keep all ingredients below the vinegar surface.getsaucepan.com/r/3569c5b0-922b-5a4e-a54d-89310646b7ed
