1 Step 1: Whisk the cake flour, potato starch and salt in a bowl. Add about a quarter of the water and whisk until smooth, then whisk in the rest until you have a thin, lump-free batter about the thickness of rice milk. Stir in the scallions.2 Step 2: Heat a 10-inch non-stick skillet over medium-low heat and brush with about 1 teaspoon of oil. Stir the batter, pour in about 1/3 cup and swirl to coat the pan evenly.3 Step 3: Cook without flipping until the base is set and lightly golden with small toasty spots, about 5 minutes. Slide the crepe onto a wire rack to cool.4 Step 4: Return the pan to medium heat with a little oil. Pour in one egg, season with salt and a pinch of white pepper, and let it begin to set.5 Step 5: While the egg is still runny, lay the cooked crepe on top, golden side up, and press gently so it sticks. Cook about 3 minutes until the egg is set and the crepe holds together.6 Step 6: Flip so the egg side is up. Lay a slice of cheese and a slice of ham on one half, then fold the crepe 2 to 3 times into a rectangle, pressing gently.7 Step 7: Make the rest of the crepes the same way, using the remaining batter and eggs and adding a bit more oil to the skillet before each one. Cut each warm crepe into bite-size pieces, then drizzle with soy sauce or oyster sauce and top with sriracha if desired. If you use deli turkey in place of ham, it comes pre-cooked, so just make sure it is heated through (165°F/74°C) and the cheese has melted before serving.getsaucepan.com/r/3f93b9d0-cbd9-53e3-a33a-07444b002655
