Back to 12 servings 1 cup urad dal, split and skinned, soaked 4 to 5 hours 0.5 teaspoon salt, or to taste 0.5 teaspoon black peppercorns, coarsely crushed 0.5 teaspoon cumin seeds 1 teaspoon ginger, finely grated 2 green chilies, finely chopped 6 curry leaves, finely chopped 0.25 cup onion, finely chopped, optional 0.25 teaspoon asafoetida (hing), a tiny pinch 2 tablespoons cilantro, chopped, optional ice-cold water, as needed for grinding neutral oil, for deep frying

1 Step 1: Rinse the urad dal well until the water runs mostly clear, then soak it in plenty of water for 4 to 5 hours. Drain completely.2 Step 2: Grind the drained dal in a blender or wet grinder with ice-cold water, a few tablespoons at a time, until a thick, smooth, fluffy batter forms. Use as little water as possible and scrape the jar often.3 Step 3: Whip the batter by hand or with a mixer for 2 to 4 minutes until it is lighter in color and noticeably larger in volume.4 Step 4: Test the batter by dropping a small spoonful into a bowl of water. It should float; if it sinks, whip it a little longer.5 Step 5: Fold in the salt, crushed pepper, cumin, asafoetida, ginger, green chilies, curry leaves, and the optional onion and cilantro until evenly combined.6 Step 6: Heat about 2 inches of oil in a kadai or deep heavy pan over medium heat until a drop of batter sizzles and rises steadily without browning right away.7 Step 7: Wet your hands, take a lemon-sized portion of batter, flatten it slightly on a greased plastic sheet or your palm, and press a hole through the center with a wet thumb to form a donut shape.8 Step 8: Slide 3 to 4 vadas gently into the oil. Fry on medium heat, turning once or twice, for 2 to 3 minutes per side, until deep golden brown and crisp, adjusting the heat so they cook through without darkening too fast.9 Step 9: Lift the vadas out with a slotted spoon and drain on paper towels. Repeat with the remaining batter, letting the oil return to temperature between batches. Serve hot.getsaucepan.com/r/58dffae6-0996-5e09-97ee-4b7367ba588b
