1 Step 1: Combine the beef with half the garlic, the oyster sauce, soy sauce, fish sauce, sugar, pepper and neutral oil. Cover and marinate for at least 30 minutes, or refrigerate up to overnight. Take it out about 15 minutes before cooking if refrigerated.2 Step 2: Arrange the watercress on a large platter, then scatter the tomato, cucumber and thinly sliced onion over it. Stir the salt and pepper for the dipping sauce into a small dish and add the lime juice just before serving.3 Step 3: Pat the beef dry with paper towels so it sears rather than steams. Heat 1 tablespoon of the high-smoke-point oil in a wok or heavy skillet over high heat until shimmering and just smoking.4 Step 4: Sear the beef in 2 or 3 uncrowded batches. Leave each batch undisturbed for 30 to 45 seconds, then sear all sides for about 1 1/2 to 2 minutes total, and remove to a plate. Add more oil between batches as needed.5 Step 5: Dump all the seared beef back into the screaming-hot pan. Drop in the butter and the rest of the minced garlic, then keep the pan moving, tossing and jerking it back and forth for 30 to 45 seconds. You're done when the butter has melted into a glaze, the garlic has turned golden and smells toasty, and the beef looks shiny and well coated.6 Step 6: Add the onion wedges and shake the pan for another 30 to 45 seconds, until the onion is just softened and lightly colored at the edges but still a little crisp. Taste a piece of beef and add a splash of soy or a pinch of salt if needed.7 Step 7: Pile the hot beef and onion onto the watercress so the greens just begin to wilt. Serve immediately with the lime dipping sauce and steamed rice.getsaucepan.com/r/5af9759f-9ad4-5481-9b57-146f05e3af09
