1 Step 1: Preheat the oven to 320°F (160°C). Lightly grease eight half-cup ramekins or a 9-inch square dish, and bring a kettle of water to a boil.2 Step 2: In a large bowl, mix the sugar or jaggery with the hot water into a smooth paste. It does not need to fully dissolve.3 Step 3: Whisk in the whole eggs and yolks one at a time, then the cardamom, nutmeg, cinnamon, cloves and salt. Whisk gently until just combined and slightly thickened, without making it frothy.4 Step 4: Slowly whisk in the coconut milk and vanilla, if using. Strain the custard through a fine sieve for a smooth texture.5 Step 5: Pour the custard into the ramekins or dish. Set them in a larger pan or baking dish and pour boiling water around them to come about halfway up the sides. Cover the outer pan loosely with foil.6 Step 6: Bake for 30 to 40 minutes for ramekins, or up to 60 minutes for a large dish, until the edges are set and the center still has a very slight wobble.7 Step 7: Remove from the water bath and cool for about 15 minutes.8 Step 8: Cover with plastic wrap and refrigerate at least 3 hours, ideally overnight, until firm and fully chilled.9 Step 9: Serve chilled, topped with chopped roasted cashews and a drizzle of maple or jaggery syrup if you like.getsaucepan.com/r/6f23c4f5-4ab3-5899-97a1-175d701f676a
