1 Step 1: Rinse the spinach well, paying attention to the stems, and trim off the roots.2 Step 2: Bring a large pot of water to a boil with the salt. Add the spinach stem ends first and cook for about 20 seconds, then add the leaves and cook 15 to 30 seconds more, until just wilted and still bright green.3 Step 3: Immediately transfer the spinach to a bowl of ice water and chill for about 1 minute, no longer, so it keeps its color and nutrients.4 Step 4: Gather the spinach by the stems and squeeze out as much water as you can. Cut into 1½ to 2 inch (4 to 5 cm) pieces, squeezing again.5 Step 5: Bring the dashi, soy sauce and mirin to a simmer in a small saucepan, then remove from the heat and let cool.6 Step 6: Place the spinach in an airtight container, pour the cooled broth over it so it is fully submerged, and refrigerate for at least 1 hour, ideally 3 to 4 hours.7 Step 7: Serve the spinach in small bowls with some of the broth, and sprinkle with bonito flakes or sesame seeds.getsaucepan.com/r/7c9df838-6ddf-50e6-908a-b01c6e85c868
