1 Step 1: Slice the eggplant about 1/2 inch thick, toss with 2 teaspoons kosher salt, and let drain in a colander for 45 to 60 minutes. Pat dry and wipe off most of the salt.2 Step 2: Whisk the yogurt with half the minced garlic and a pinch of salt in a bowl, then refrigerate until needed.3 Step 3: Pour about 2 inches of neutral oil into a heavy pan and heat over medium-high. Fry the eggplant slices in batches, 7 to 9 minutes total, flipping halfway, until golden on both sides. Drain on paper towels.4 Step 4: In a saucepan, heat 2 tablespoons oil over medium. Saute the remaining garlic for 45 seconds, then stir in the tomato paste, turmeric and black pepper and cook about 1 minute.5 Step 5: Add the diced tomatoes with their juices, the red pepper flakes, a pinch of salt and the water. Bring to a simmer, cover and cook on low 15 to 17 minutes. If the sauce is not thick like chunky pasta sauce, uncover and simmer on medium until it thickens.6 Step 6: Layer a quarter of the sauce in a wide, heavy pot with a tight-fitting lid, then a third of the eggplant. Repeat until the eggplant and sauce are used up, finishing with sauce.7 Step 7: Put the lid on firmly and let the pot cook over medium-low heat for roughly 15 minutes, until the eggplant turns very soft and the flavors have blended into the sauce.8 Step 8: Spread about half a cup of the garlic yogurt in a serving dish. Top with the warm eggplant mixture, drizzle the remaining yogurt over it and sprinkle generously with dried mint.getsaucepan.com/r/8aeef900-2838-572c-875d-a9a49d9aa975
