1 Step 1: Soak the black glutinous rice in water with the salt for 6 to 8 hours or overnight, then drain and rinse.2 Step 2: Combine the fresh milk, condensed milk and boiling water in a clean pot and whisk until fully dissolved.3 Step 3: Heat the milk gently over low heat, stirring, until it reaches 70 to 80°C (158 to 176°F). Turn off the heat. Do not let it boil.4 Step 4: Let the milk cool to 40 to 45°C (104 to 113°F). Skim any foam from the surface.5 Step 5: Stir about a cup of the warm milk into the room-temperature starter yogurt until smooth, then return this mixture to the pot and stir well.6 Step 6: Strain the mixture through a fine sieve into clean, dry glass jars. Cover with tight lids.7 Step 7: Set the jars in an insulated pot or foam box and surround them with warm water at about 40°C (104°F), reaching about one third up the jars. Incubate for 6 to 8 hours without disturbing them. Check the water temperature after about an hour and top up with warm water as needed. Do not incubate longer than 8 hours.8 Step 8: Chill the set yogurt in the refrigerator until cold and thick.9 Step 9: Place the soaked rice in a pot with 500 ml water and the pandan leaves. Bring to a boil, then reduce to a simmer and cook, stirring occasionally, until the rice is soft and the water has nearly absorbed, about 30 to 40 minutes. Discard the pandan leaves.10 Step 10: Stir in the coconut milk and sugar, then cook about 5 more minutes until the sugar dissolves and the rice is glossy. Let the rice cool completely.11 Step 11: To serve, spoon the cooled black rice into a glass or bowl, top with a jar of chilled yogurt, add ice if you like, and mix before eating.getsaucepan.com/r/9e748182-9dbc-5322-89e9-c60122fec063
