1 Step 1: Preheat the oven to 325°F (160°C) with the rack in the middle.2 Step 2: Pulse the shallots, chiles, galangal, ginger, garlic, candlenuts, coriander, turmeric and salt in a food processor for 2 to 3 minutes until a thick paste forms. Add water only a tablespoon at a time if the mixture is too dry.3 Step 3: Heat the oil in a large Dutch oven over medium heat and cook the spice paste for 3 to 5 minutes, stirring, until fragrant and darkened.4 Step 4: Add the coconut milk, lime leaves, lemongrass, cinnamon and tamarind and bring to a simmer over medium heat. Lower the heat and stir in the beef.5 Step 5: Cover the pot, transfer it to the oven and cook uncovered for about 2 hours, stirring every 30 minutes, until the sauce has reduced and oil pools on the surface.6 Step 6: Move the pot to the stovetop over medium-low heat and simmer uncovered for 45 minutes to 1 hour, scraping the bottom often, until the beef is very tender and the sauce is dark and clinging to the meat.7 Step 7: Stir in the kerisik and sugar, then taste and add salt as needed. Discard the lemongrass knot and cinnamon stick if you prefer, and serve hot.getsaucepan.com/r/a1cb21db-60ce-5619-a188-e64ab414d2f1
