1 Step 1: Heat the oil in a large wok or heavy pot over medium-high heat. Add the curry paste and stir for about 1 minute until fragrant and the oil starts to separate.2 Step 2: Add the chicken and stir to coat it in the paste. Cook for 2 to 3 minutes until the outside is no longer pink.3 Step 3: Pour in the stock and about three-quarters of the coconut milk, bring to a simmer, then stir in the fish sauce, sugar and lime leaves. Simmer gently for 8 to 10 minutes until the chicken is cooked through and the sauce begins to thicken.4 Step 4: Add the eggplant and red pepper and simmer for 3 to 5 minutes until the eggplant is tender but still holds its shape.5 Step 5: Turn off the heat, stir in the remaining coconut milk and the basil so it wilts into the curry. Taste and adjust with fish sauce, sugar or a little more paste. Serve over jasmine rice, garnished with extra basil.getsaucepan.com/r/e471be78-85c9-5ba6-bc76-606e9a3c3651
