1 Step 1: Mix the flour, baking powder, baking soda, sugar and salt in a large bowl. Add the yogurt and water gradually and knead into a soft, smooth dough.2 Step 2: Knead in the ghee until fully absorbed, then cover and rest the dough for 30 minutes.3 Step 3: Mix the grated potatoes with the onion, green chilies, coriander, ginger paste, red chili powder, cumin, coriander powder, garam masala, amchur, ajwain and salt until evenly combined and free of lumps.4 Step 4: Divide the dough into balls, flatten each into a disc, and place a spoonful of the potato filling in the center. Seal the edges and roll gently to an even 6-inch round, dusting with flour as needed.5 Step 5: Brush the top with water and sprinkle with nigella seeds, sesame seeds, chopped coriander and a pinch of chili powder, pressing lightly so they stick.6 Step 6: Heat a tawa or heavy skillet over medium-high heat until very hot. Place the kulcha topping side down, sprinkle a little salt water on the pan beside it, and cook about 1 minute until bubbles form and the base is spotted.7 Step 7: Flip and cook directly over the flame or on the pan until golden brown spots appear and the kulcha puffs, about 1 to 2 minutes more.8 Step 8: Brush generously with melted butter and serve hot.getsaucepan.com/r/e9368d2f-bfa0-5d19-a6a1-3f1288da2552
