1 Step 1: Heat oven to 200°F (95°C) and keep fries warm on a sheet pan. Cook frozen fries according to package directions, or fry homemade fries in oil at 350°F (175°C) until golden and crisp, then season with salt.2 Step 2: Combine the soy sauce, vinegar, oyster sauce, aji amarillo paste and pisco (if using) in a small bowl and mix well. Set aside.3 Step 3: Pat the beef dry and season generously with salt and pepper. Toss with half of the sauce and let it sit while you prep the vegetables.4 Step 4: Heat a wok or large skillet over high heat until very hot, about 2 minutes. Add 1 tablespoon oil and swirl until it shimmers.5 Step 5: Sear half the beef in a single layer without moving it for about 1 minute, then flip and sear 30 seconds more until browned but still a little pink inside. Remove to a plate and repeat with 1 tablespoon oil and the remaining beef.6 Step 6: Add the remaining 2 tablespoons oil to the pan, reduce heat to medium-high, then stir-fry the onion for 2 to 3 minutes until just crisp-tender.7 Step 7: Add the garlic and cook for 30 seconds until fragrant, then add the tomatoes and toss for about 1 minute until just softened but still holding their shape.8 Step 8: Return the beef and any juices to the pan along with the remaining sauce and the scallions. Toss for about 1 minute until the sauce thickens slightly and coats everything.9 Step 9: Remove from heat, stir in the cilantro, and taste for salt. Serve immediately over white rice with the hot fries alongside or tossed in, spooning the pan sauce over everything.getsaucepan.com/r/eb037b7a-271a-592e-8580-70ff21b8ee8e
