1 Step 1: Season the pork with salt and pepper, dust with flour, dip in the beaten egg, then press into the panko to coat fully.2 Step 2: Heat about 1/2 cm (1/4 in) of oil in a frying pan over medium-high heat to 170°C (340°F). Fry the cutlets 2 to 3 minutes per side until golden brown and cooked through, then drain on a wire rack.3 Step 3: Once the cutlets cool slightly, cut them into 1.5 to 2 cm (about 3/4 inch) wide slices.4 Step 4: In a small pan about the width of the serving bowl, combine the dashi, soy sauce, mirin and sugar. Add the sliced onion and simmer over medium heat until the onion is softened and translucent, about 3 to 4 minutes.5 Step 5: Arrange the cutlet slices on top of the simmering onion. Drizzle the beaten eggs evenly over and around the pork, put the lid on, and cook on low for 1 to 2 minutes. Stop when the egg has just barely set and is still soft and runny in spots.6 Step 6: Divide the hot rice between two bowls. Slide the pork and egg mixture over the rice, garnish with scallions or mitsuba, and serve immediately.getsaucepan.com/r/ef10581c-91b1-514f-a24f-f63ef5d5c2ed
