1 Step 1: Press the diced onion and tomato in a fine sieve for about a minute to remove excess juice.2 Step 2: Combine the beef, drained onion and tomato, cilantro, chilies, garlic, ginger, coriander, cumin, pomegranate seeds, chili flakes, pepper and salt. Mix about 2 minutes until the mixture is tacky.3 Step 3: Add both flours and the egg. Mix 60 to 90 seconds, scraping the bowl so no dry pockets remain.4 Step 4: Chill the mixture for 15 minutes to firm the fat and hydrate the flours. If it still feels loose, chill 10 minutes longer rather than adding more flour.5 Step 5: Divide into 6 portions of about 200 g each. Shape into wide, flat patties about 5 inches across and 1/2 inch thick, pressing a shallow dimple in the centre.6 Step 6: Pour 3 tablespoons of oil into a large skillet and warm it over medium-high heat until it shimmers. Lay in 2 or 3 patties, leaving space between them, and turn the heat down to medium.7 Step 7: Cook 4 to 5 minutes per side, flipping once, until deeply browned at the edges and the centre reaches 160°F (71°C) on an instant-read thermometer.8 Step 8: Rest the cooked patties on a wire rack or paper-lined tray for 3 minutes. Wipe the pan if needed, add the remaining oil, and repeat with the remaining patties.getsaucepan.com/r/f0fdd251-c3f3-55ad-8c4d-7fc4eab9b6b7
