1 Step 1: Roast the chilies over medium-high heat in a grill pan, cast-iron skillet or under a broiler, turning occasionally, for 8-10 minutes until blackened and blistered all over.2 Step 2: Roast the unpeeled garlic and shallots in the same pan or on a parchment-lined tray at 400°F (200°C) for 15-20 minutes, or over medium heat for about 5 minutes, until soft with charred spots.3 Step 3: Transfer everything to a bowl, cover and let it steam for 5-10 minutes until cool enough to handle.4 Step 4: Peel away the charred skin from the chilies, garlic and shallots, leaving a few black specks. Remove the chili stems and do not rinse the vegetables.5 Step 5: Pound the garlic and salt into a paste in a mortar, add the shallots and pound again, then add the chilies and pound until broken into a coarse, chunky texture.6 Step 6: Stir in the fish sauce, lime juice and cilantro. Taste and adjust with salt, fish sauce or lime juice.7 Step 7: Rest the dip at room temperature for 10-15 minutes, then serve with sticky rice, fresh and steamed vegetables such as cucumber, cabbage, long beans and Thai eggplant, and grilled meats or crispy pork rinds.getsaucepan.com/r/0bb5aa69-a0e0-59de-8d4d-0cb052eb3fe9
