1 Step 1: Heat the oven to 300°F (150°C). Put the pork in a large bowl, sprinkle over the salt, cumin, oregano, chili powder and smoked paprika, and toss until the meat is evenly coated.2 Step 2: Warm the oil or lard in a 6-quart Dutch oven over medium-high heat. Working in batches of roughly 3 pieces, brown the pork deeply on every side, about 3 to 4 minutes per side, and add a little more oil between batches if the pot looks dry.3 Step 3: Transfer the pork to a plate. Leave the rendered fat in the pot, reduce the heat to medium, and sauté the onion until softened, about 5 minutes.4 Step 4: Add the garlic and sauté for 1 to 2 minutes until fragrant. Pour in the orange juice and lime juice and scrape up the browned bits from the bottom of the pot.5 Step 5: Pour in the Coca-Cola and bring to a boil.6 Step 6: Return the seared pork and any juices to the pot so it is submerged in the liquid. Tuck the orange rinds and bay leaves in around the pork.7 Step 7: Cover the pot and transfer it to the oven. Braise for 3 hours, until the pork is extremely tender and pulls apart easily.8 Step 8: Lift the pork out and shred it with two forks, discarding any large pieces of fat. Return the shredded meat to the pot with its juices and stir to combine.9 Step 9: Optional: spread the shredded pork on a sheet pan and broil for 3 to 5 minutes until the edges are crispy and browned, then flip and broil another 3 to 5 minutes.10 Step 10: Serve the carnitas in warm tortillas topped with cotija, cilantro, pickled onions and a squeeze of lime.getsaucepan.com/r/100377c0-a191-5d77-9fae-f88ae0c3dc81
