1 Step 1: Cut the tomatoes into wedges, chop the scallions and mince the garlic. Beat the eggs with a pinch of the salt until fully combined.2 Step 2: Heat 1 tablespoon of oil in a large nonstick skillet or wok over high heat. Pour in the eggs, let the bottom set, then scramble briefly into soft, fluffy pieces, about 1 minute. Transfer to a plate.3 Step 3: Reduce the heat to medium-high and add the remaining oil. Fry the garlic and ginger until fragrant, about 30 seconds, then add the scallion whites and stir briefly.4 Step 4: Add the tomatoes with the remaining salt and the sugar. Cook, stirring and mashing with a spatula, until soft and broken down into a thick sauce, 4 to 5 minutes, adding a splash of water if the pan gets dry.5 Step 5: Stir in the soy sauce and the water, then return the eggs to the pan. Gently fold to coat, breaking the eggs into larger soft pieces, and cook 1 to 2 minutes until the sauce is glossy and the eggs are heated through but still tender.6 Step 6: Off the heat, stir in the sesame oil and taste for seasoning. Scatter the remaining scallion greens over the top and serve immediately over steamed white rice.getsaucepan.com/r/24366b48-bbde-5e3e-8834-9083bfd81009
