1 Step 1: Mix the flour, salt and sugar in a bowl. Add the hot water and stir with chopsticks or a fork until lumpy.2 Step 2: Add the yeast, cold water and 1 tablespoon oil and stir until absorbed. Knead into a very sticky, rough ball, just until it holds together. Grease the dough, cover and rest 20 to 30 minutes.3 Step 3: Heat the 35 g oil in a small pan over medium heat until hot. Stir in the cake flour and cook, stirring, until it darkens slightly and smells toasty, about 3 to 5 minutes. Pour into a bowl and let cool completely; it should be spreadable, not runny.4 Step 4: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment.5 Step 5: On a lightly floured surface, roll the dough into a rectangle about 10 by 16 inches (25 by 40 cm), with the long side facing you.6 Step 6: Spread the cooled oil paste evenly over the dough, leaving about 1/2 inch bare along the top edge.7 Step 7: Roll the dough up tightly from the bottom edge into a log, then pinch the seam closed.8 Step 8: Cut the log into 6 equal pieces. Flatten each piece and pinch the two cut sides together in the middle.9 Step 9: Roll each piece into an oval. Fold the top third down and the bottom third up, then roll and fold once more. Cover and rest 10 minutes.10 Step 10: Press the smooth side of each piece into the white sesame seeds (and black seeds if using). If the dough is not sticky enough to hold seeds, lightly dampen it first.11 Step 11: Roll each piece sesame-side up into a rectangle about 6 by 3 inches (15 by 8 cm) and place on the lined sheet.12 Step 12: Bake for about 12 minutes, until the tops are golden brown and the bottoms are set.13 Step 13: Cool on a rack for a few minutes. Serve warm, or split open along one side to fill.getsaucepan.com/r/30f70984-7529-56be-97ee-c5044d8ec2e0
