1 Step 1: Whisk the all-purpose flour, mung bean flour, salt and five-spice powder together. Gradually add the water, whisking until smooth and runny, then rest the batter for 20 minutes. Thin with a little more water if it thickens.2 Step 2: Meanwhile, heat the 200 ml neutral oil in a small saucepan to 170°C (340°F). Deep-fry the wonton wrappers one at a time for about 20 seconds each, until golden and blistered, then drain on paper towels.3 Step 3: Finely chop the scallions and cilantro and set them aside with the sesame seeds and sauces.4 Step 4: Heat a 28 cm (11 in) non-stick pan over medium heat and wipe it with a thin film of oil.5 Step 5: Pour in half the batter and quickly spread it from the center outward into a thin circle about 22 to 25 cm (9 to 10 in) across.6 Step 6: Break an egg directly onto the still-wet batter, pierce the yolk, and smear the egg all over the crepe. Sprinkle half of the scallions, cilantro, and sesame seeds on top, then let it cook for about 1 minute, until the egg is no longer runny.7 Step 7: Flip the crepe with a wide spatula so the egg side is underneath, then cook 20 seconds more until the edges look dry and lift easily.8 Step 8: Flip the crepe egg-side up. Spread with 1 tablespoon of the sweet bean sauce and half the chili sauce.9 Step 9: Place a fried wonton cracker in the center, then fold the sides over it into a parcel. Serve hot straight away, and repeat with the remaining batter and filling.getsaucepan.com/r/827e5d2f-0656-51e1-aa2e-c904fd870424
