1 Step 1: Rinse the fish, pat it very dry, and set aside.2 Step 2: Soak the goraka in the warm water for 15 to 20 minutes until soft, then pound or blend it with 1 to 2 tablespoons of the soaking water into a thick paste.3 Step 3: In a bowl, mix the ground pepper, ginger, garlic, turmeric, chili powder, fenugreek, curry powder and salt.4 Step 4: Combine the goraka paste with the spice mix into a dark paste, coat each piece of fish fully, and rest 15 to 20 minutes at room temperature.5 Step 5: Line a clay pot, skillet or Dutch oven with banana leaf if using. Scatter half the curry leaves and the pandan over the base, then arrange the fish in a single layer without crowding. Scatter the remaining curry leaves on top.6 Step 6: Pour the 1/2 cup water around the fish, not over it. Bring to a gentle simmer over medium-low heat.7 Step 7: Reduce to low, cover, and cook 30 to 45 minutes without stirring, gently shaking the pan occasionally. The liquid should reduce to a thick, dark paste that clings to the fish, with a dark crust forming on the base but no burnt smell.8 Step 8: Remove from the heat and let the curry cool in the pot for 15 to 20 minutes so the coating sets, then serve warm.getsaucepan.com/r/3fccef6b-046b-5f8a-a73b-8204c6f7da32
