1 Step 1: Give the dried kokum a quick rinse, then let it sit in 1 cup of hot water for 20 to 30 minutes, until the pieces are soft and the water has turned a deep pink.2 Step 2: Crush and squeeze the kokum in the water with your fingers, then strain, pressing the pieces to extract all their color and sourness. Discard the solids.3 Step 3: Add 2 cups of water to the kokum extract, then stir in the thick coconut milk and salt. Taste, adding sugar only if too sour, and adjust until tangy, mildly sweet and savory.4 Step 4: Stir in the chopped cilantro and chill the drink for at least 1 hour so the flavors meld.5 Step 5: Just before serving, heat the oil in a small pan over low heat. Add the mustard seeds and let them crackle, then the cumin seeds.6 Step 6: Add the curry leaves, asafoetida, garlic and dried chili, and fry about 30 seconds until the garlic turns light golden.7 Step 7: Pour the hot tempering over the chilled drink, stir well, and serve immediately in chilled glasses.getsaucepan.com/r/93098adb-05be-53ee-ae4f-2e3023cd5d60
