1 Step 1: Parboil the bones in boiling water for 10 minutes, then drain, rinse and scrub off the scum. Clean the pot before using it again.2 Step 2: Bring the 14 cups of water with the salt and two ginger slices to a simmer. Add the bones, bring to a boil while skimming off foam, then reduce to a very gentle simmer with the lid askew for 6 to 8 hours.3 Step 3: Tie the brisket and shank with kitchen twine, par-boil briefly, rinse, and add them to the pot. Keep at a gentle simmer and skim any foam as it rises.4 Step 4: Simmer the brisket for 2.5 to 3 hours and the shank for 1 to 1.5 hours, until tender. Transfer each to a bowl of iced water to chill, then refrigerate until the broth is ready.5 Step 5: About 2.5 hours before the broth is done, char the onions, ginger and shallots on a grill pan or under the broiler for 10 to 15 minutes, until blackened and softened. Peel off the charred skin.6 Step 6: Dry-toast the cassia bark, star anise, cloves, coriander, fennel and cardamom in a skillet over medium-low heat for 2 to 3 minutes, until fragrant. Watch the cloves so they do not burn, then tie the spices in a spice bag.7 Step 7: Skim excess fat from the broth, leaving some in for richness. Add the spice bag, charred onion, ginger and shallots, and simmer for about 2 hours. Then remove the aromatics and spice bag.8 Step 8: Just before serving, season the broth with fish sauce, rock sugar and more salt to taste. If it has reduced too much, add a splash of water. Keep it hot.9 Step 9: Cook the rice noodles according to the package directions, then rinse and drain. Thinly slice the cooked brisket and shank against the grain.10 Step 10: Divide the noodles among bowls and top with the sliced cooked beef. Add the raw sirloin slices if using, paper-thin onion, scallion whites, scallion greens, cilantro and cracked black pepper.11 Step 11: Bring the broth back to a rolling boil and ladle about 1.5 cups into each bowl over the beef; the hot broth cooks the raw slices. Serve immediately with lime, bean sprouts, basil, hoisin and sriracha on the side.getsaucepan.com/r/555d07b4-48a5-5889-8d42-19b5c52f1870
