1 Step 1: Blend the chopped pandan leaves with the warm water for about 1 minute, then strain through a fine sieve or cheesecloth, pressing the pulp to get about 130 to 140 ml (about 1/2 cup) of green juice.2 Step 2: Mix the grated coconut with the salt in a heatproof dish and set the knotted pandan leaf on top. Steam over medium heat for 10 to 15 minutes. Discard the leaf, then spread the coconut out on a plate and let it cool all the way down.3 Step 3: Finely chop the palm sugar into small, firm shards so it melts quickly and evenly inside the balls.4 Step 4: Whisk the glutinous rice flour, regular rice flour and salt together. Add the pandan juice gradually, then knead for 2 to 3 minutes until smooth, pliable and not sticky.5 Step 5: Pinch off a piece of dough about the size of a walnut and flatten it. Add about 1/2 teaspoon of palm sugar to the centre, fold the edges up and seal them completely, then roll into a smooth ball with no cracks. Set on a rice-flour-dusted plate and cover with a damp towel.6 Step 6: Fill a large pot with water and bring it to a hard, rolling boil. Lower the balls in a few at a time, giving the water a gentle stir so they don't stick to each other.7 Step 7: Cook until the balls float to the surface, then let them bob for another 30 to 60 seconds so the sugar fully melts inside.8 Step 8: Scoop the klepon out with a slotted spoon and let the water drain off. While they are still warm and a little tacky, turn each one in the steamed coconut until it is covered all over. Serve warm.getsaucepan.com/r/6043afc9-8b4b-5649-9681-ddc23fd54f1e
