1 Step 1: Stir the honey into the water in a heavy saucepan over medium heat until fully dissolved.2 Step 2: Bring to a boil, then gently boil for 10 to 15 minutes, skimming off any foam from the surface.3 Step 3: Add the vinegar, return to a boil, then reduce to a simmer and cook about 30 minutes, until the syrup has slightly thickened. Taste and add a little more vinegar if you want more tang.4 Step 4: In the last 5 minutes of simmering, add the fresh mint sprigs so they infuse without turning bitter.5 Step 5: Remove from the heat and let the syrup cool to room temperature, at least an hour, for a stronger mint flavor up to 24 hours. Remove and discard the mint.6 Step 6: Pour the cooled syrup into a sterilized, airtight, dry bottle and refrigerate or store in a cool, dark place.7 Step 7: To serve, stir 3 to 4 tablespoons of syrup into a tall glass of ice, add about 1 cup of cold or sparkling water, and adjust to taste. Garnish with lime or mint.getsaucepan.com/r/6faebd9a-2b30-53f1-bf7d-779aaad4faef
