1 Step 1: Simmer the broth spices in 6 cups of water over medium heat until about half the liquid remains, then cover and set aside.2 Step 2: Brown the sliced onion in hot oil over medium-high heat until golden, about 5 to 10 minutes, then add the ginger-garlic paste, cumin seeds, cardamom pods and a pinch of salt. Fry for about 5 minutes, adding small splashes of water to keep the spices from sticking.3 Step 3: Lower the heat to medium, add the chicken and cook gently for 15 to 20 minutes, until the chicken is no longer pink.4 Step 4: In a small bowl, combine the yogurt with the ground coriander and garam masala. Pour this over the chicken and stir often for about 5 minutes, until the liquid has mostly cooked off and oil pools around the edges of the masala. Mix in the green chili and move the pot off the burner.5 Step 5: Meanwhile, drain the soaked rice and set it aside.6 Step 6: Strain the broth, discarding the whole spices, and measure out 3 cups. Add it to the chicken, adding a little water if you are short.7 Step 7: Return the pot to the stove, add the drained rice and bring to a boil. Taste the liquid and adjust the salt, since the rice will need seasoning.8 Step 8: Cover the pot tightly, reduce the heat to low and cook for 30 minutes without lifting the lid.9 Step 9: Turn off the heat and let the pot rest, covered, for 10 minutes. Fluff the rice gently with a fork and serve hot.getsaucepan.com/r/9e5845f3-1e0c-5c12-b6ea-129b9498bbfa
